We opened with three tables, a borrowed grill and the belief that meat cooks at the speed it asks for. Twenty-seven years on, we still light the fire at six in the morning.
Every cut passes through the same hand that picked it at dawn. No shortcuts: embers, coarse salt and patience.

What we are made of

We grew without changing what we do: the same supplier, the same chimichurri recipe, the same opening time.
We opened seven locations because people asked us to, not because we set out to. Each one has its own grill master and its own character.
What we never negotiate: the meat is cut here, the bread is baked here, and the table is served looking you in the eye.
